The Olivière is a hardy variety typical of the Languedoc-Roussillon, mainly in the Aude and Pyrenees-Orientales, it has the particularity to hold up well the cold. Many trees have survived the great freeze of 1956 and some of our trees are several centuries. This is an olive oil with complex aromas of dried fruits such as almond, hazelnut, with a slight touch of apple green fruity.
It is long in the mouth, an olive oil is thick and creamy. It goes well with fresh dishes such as hot food.
